These are the coconut cupcakes I made for Easter this year. They are topped with cream cheese frosting, shredded coconut and Cadbury dark chocolate mini eggs, and they are truly scrumptious. Happy Spring!
Adorbs!! Plus, they look delicious. I might have to try baking -- earlier in May I did a brunch for friends inspired by a book -- but the food didn't really match the book so much as I just had an excuse to drink mimosas. :)
